I found this Junmai Ginjo to be perfect for experiencing Onna Sake. The minerality of the water is beautiful and mildly tingling lactic acidity on the pallet. Surprising flavour profile and medium body while being smooth to drink. Low acidity with mild umami. I wouldn't call it medium sweet, rather medium dry regardless of it being so smooth due to it's medium body flavour leaning to dry with some sweetness.
