It has a lighter, cleaner taste than many junmai I’ve tried, while still maintaining a stronger, fuller body when compared to honjozo. Smooth, dry, and refined, without any harsh vinegar-like sharpness. There’s a gentle umami flavor that makes it very pleasant and easy to enjoy. I had mine warm, which really brought out its depth, and I bought my bottle from Tippsy Sake, I’d absolutely get it again.
