Established in 1848, this brewery stands as one of Hiroshima's oldest sake producers, renowned for its sake craftsmanship in Hiroshima, a region known for its sake production. Continuing the soft water brewing method pioneered by Mitsui Sensaburo, a prominent sake brewer in Mitsu, local artisans and brewers in Aki-Tsu uphold tradition and mastery. The region's climate and terrain influence the sake-making processes of various breweries within the prefecture, resulting in a diverse range of flavors, from light and refreshing to rich and full-bodied, as well as varying degrees of sweetness and dryness. Moreover, credited with inventing the "soft water brewing method" during the Meiji period, this sake-producing region gained nationwide acclaim for its high-quality sake, earning it a place among Japan's top three sake-producing regions.
